Happy Monday! I hope your November is off to a great start! I know the first of November tends to be the unofficial start of the holiday season for many, however I always tend to cling to autumn a little bit more before jumping into the holiday spirit. We cannot forget about Thanksgiving!
With that being said, I wanted to share a very fall-appropriate recipe with you all. These pumpkin chocolate chip cookies are to die for! I made them a few weeks back and they are such a great spin on a classic. So tasty and so easy to make! With a few more weeks until Thanksgiving, they are still such a great treat for this time of year! After then feel free to enjoy all the Holiday cookies your heart desires, but until then I hope you give these a try!
Ingredients
1/2 c. softened butter
1 1/2 c. all purpose flour
1/2 c. sugar
1 c. brown sugar
1 tsp. vanilla extract |
8 tbsp. pumpkin puree
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1/4 tsp. cinnamon

1/4 tsp. pumpkin pie spice
1/8 tsp. nutmeg
1/2 tsp. salt
1/2 tsp. baking soda
1 cup chocolate chips

Directions
Preheat oven to 350 degrees.
Mix butter and sugar until well combined. Add pumpkin puree and vanilla. Mix well.
Combine all dry ingredients in a separate bowl and mix.
Add to wet ingredients. Combine well.
Mix in chocolate chips.
Place tablespoon size scoops of dough onto ungreased cookie sheet.
Cook for 15 minutes, until edges are brown.
Let cool and enjoy!
